Feta, Olive & Pesto Chicken Casserole

This is one of the most ridiculously quick meals I’ve come across as a low carber. The prep time is less than 10 minutes and it’s super tasty. But I won’t lie, my kids are not wild about olives and so they’re not hugely wild about this recipe either. But I love it. It’s quick, easy and so very very tasty!

Prep & cooking time is under 40 minutes, which makes it a week day winner!

Ingredients
  1. 700g's of chicken ( filleted breasts or thighs work best)
  2. 250g's of pesto (I used chilli & garlic pesto but have also used basil or red pepper pesto before)
  3. 2 cups of double cream
  4. 8 tablespoons of pitted olives
  5. 250g's of feta cheese, diced
  6. 1 teaspoon of crushed garlic
  7. butter for frying
  8. salt and pepper to taste
Instructions
  1. Pre-heat your oven at 180 degrees C
  2. Grease an oven proof dish
  3. Cube the chicken pieces and fry till browned in the butter
  4. Layer in the oven proof dish
  5. Add the feta, olives and garlic
  6. Mix the cream and pesto together
  7. Pour over the feta, olives and chicken
  8. Bake in the oven for 30 minutes
Notes
  1. I served mine with a bed of mixed greens.

Delicious served with mixed greens or I’m pretty sure, if you eat pasta, it would be tasty with pasta or cauli rice too!
