Ingredients
  1. Flour-less Pastry Cases
  2. 150g almond flour/ground almonds
  3. 1 egg medium
  4. 1 Tbs coconut flour
  5. 1-2 tbs xylitol
  6. ½ tsp ground cinnamon
  7. ½ tsp ground nutmeg
  8. Christmas Mince Pie Filling
  9. 1 small Granny Smith apple grated
  10. 50g butter
  11. 1-2 tbs xylitol
  12. ¼ tsp ground mixed spice
  13. ¼ tsp ground cardamon
  14. ¼ tsp ground cloves
  15. ¼ tsp ground nutmeg
  16. 75g almond flour/ground almonds
  17. Brandy to taste
  18. Brandy Whipped Cream
  19. double cream/whipping cream
Instructions
  1. Flour-less Pastry Cases
  2. Put all the ingredients in a mixing bowl and mix together with a fork until it resembles soft pastry. If it is too damp, add some more almond flour/ground almonds. if it has become too dry, add a drop of water at a time.
  3. Roll out in between 2 sheets of baking paper and cut each circle slightly larger than the case you will be baking them in.
  4. Press the pastry circles into each case and place on a baking tray. Bake in the cases at 180C/350F for 10 minutes, then remove from the pastry from each case and bake for 2 minutes on the baking tray to brown slightly.
  5. Christmas Mince Pie Filling
  6. Melt the butter and the grated apple on low in a saucepan.
  7. Add all the other ingredients (apart from the brandy) and heat through for a minute or two.
  8. Remove from the heat and add brandy to taste (I add 1 or 2 tablespoons).
  9. Once cold, divide the mixture evenly amongst the pie/tart cases.
  10. Brandy Whipped Cream
  11. Whip the cream gently until soft peaks for, then add the sweetener, whip until almost firm, then fold in the brandy to taste.
  12. To Serve
  13. Top each low carb Christmas mince pie with the brandy cream and sprinkle with a ground nutmeg.
Notes
  1. I loved the brandy cream, but be careful not to add it when the mince pies are still hot, restrain yourself and wait till they've cooled a bit, otherwise you land up with a gooey, runny, mess!
