One of our favorite meals…. actually, scrap that, one of my favorite meals, because it’s quick, easy and nutritious, is LCHF bobotie. It literally takes 20 minutes to prepare and an hour cooking time total and it’s yummy! Which makes it the perfect mid week meal! And my kids eat it too, when I go easy on the cayenne pepper!

Ingredients
  1. 2x Onions
  2. 1 tea spoon crushed garlic
  3. 500g mince
  4. 2 tea spoons of curry powder
  5. 1 tea spoon of coriander
  6. 1 tea spoon of giner
  7. 1/5 tea spoon mixed herbs
  8. 1 tea spoon tumeric
  9. 1/5 tea spoon cinnamon
  10. 1/5 tea spoon of cayenne pepper
  11. 1 cup double cream yoghurt
  12. 2x eggs
  13. salt & pepper to taste
  14. knob of butter
  15. 2x Bay Leave
Instructions
  1. Melt a knob of butter in a large pot
  2. add the garlic and chopped onion
  3. Once the onion is transparent, add the mince
  4. Brown the mince
  5. Once the mince is browned add the spices
  6. Pre-heat the oven to 180 degrees C
  7. Stir and cook the mince mixture till browned and fragrant
  8. Decant into an oven dish
  9. Blend the yoghurt, eggs, salt & pepper
  10. Tuck bay leaves mince mixture
  11. Pour yoghurt mixture over mince
  12. Bake for 35 minutes
Notes
  1. Because this is a Banting recipe, we do not eat rice, so we enjoy ours with a tomato and onion salad and a side of Avo.
